Résumé :

The involvement of free radicals in ageing and in chronic diseases such as atherosclerosis, diabetes, cancer and certain inflammatory and neurodegenerative diseases is now recognized. Antioxidant compounds capable of neutralizing free radicals therefore have many potential applications, ranging from general health effects to the prevention of certain chronic diseases. In recent years, we have observed a veritable explosion of antioxidants in the health nutrition market.

 

Around the world, numerous public and private research teams are working to identify new antioxidant molecules and develop their applications. We are also witnessing the emergence in this sector of new companies specialized in identifying and purifying new antioxidant compounds or in developing antioxidant-enriched functional foods.
