Résumé :

The poultry industry carries considerable economic weight in both Quebec and Canada. In Quebec, the value of sales of poultry products in 2005 was an estimated $ 800 million, while Canadian poultry production was evaluated at $ 2.6 billion. Poultry has surpassed beef in individual consumption and become the most consumed meat in Canada. Not only has domestic consumption of poultry grown, exports of poultry products have also increased a great deal. In fact, Canadian exports more than doubled from $ 100 million in 2000 to $ 215 in 2005, making Canada the13th exporter of poultry products in the world. In Quebec, exports have tripled, jumping from $ 30 million in 2000 to $ 104 million in 2005.
