Résumé :

Milk and cheese whey have a number of potentially bioactive constituents, including several proteins (caseins and whey proteins) and peptides derived from the hydrolysis of these proteins or naturally present in milk.  These milk substrates also contain "minor" compounds, i.e. present in trace amounts, such as growth factors.
